THE RED CABBAGE CAFE: DINING OFF THE BEATEN TRACK

It seems hidden away in a back corner of Puerto Vallarta
only the first time you visit The Red Cabbage Cafe. After that it is apt to become a centerpiece of your dining experience
in the city, a place to return to often. The "Chiles en Nogada" alone bring many diners back. This world class dish
might take two days to prepare in your own kitchen, even if you had perfected the recipe.
Classic Mexican cuisine is the mainstay of The Red Cabbage Cafe's offerings, with dishes such as Mole Poblano,
Polio Pipian, Albondigas en Chipotle, Lomitos a la Naranja, or Carne en Su Jugo. A comment guests often make about the Mexican
Plate is that each of its components shows off its own distinctive flavor. A modern way with classic ingredients is apparent
in other Red Cabbage dishes such as Queso Rebecca, an appetizer of panela cheese, a zesty salsa of chipotle and ancho chiles
served with freshly made tortillas. Those ordering the Spinach Salad for the first time might be surprised to find it consists
of cold, cooked spinach in a savory dressing. For the faint of heart tourist or adventurous Mexican diner there is even an
American Plate of chicken, mashed potatoes, gravy and cranberries.
While a singular devotion to Mexican foods is first and
foremost at this high concept restaurant, its venue is deceptively simple. A bohemian flare greets you at the threshold. When
you step into the colorful collage of its decor, you know you are in a place that is different. Despite its success, The Red
Cabbage chooses to remain a small restaurant. Owner Lola Bravo knows that her loyal well-trained staff and deliberately small
size help guarantee what she prizes most, which is high quality. With its creative decor, personal service and inventive combination
of the foods of new and old Mexico, a visit to the Cabbage promises memorable dining.
Though its delightfully
off-beat atmosphere is complemented by its off the beaten track location, finding The Red Cabbage Cafe can be a little tricky
for first time visitors or cab drivers unfamiliar with its location in a residential neighborhood. In fact it is only a short
ride by taxi or the Remance bus from the heart of town. Located in Colonia Remance (ray-MAHN-say), The Red Cabbage Cafe can
